While I fancy myself a fairly unopinionated human, when it comes to salmon, I’ve got opinions, man. For instance, I am of the wholehearted belief that:

  • Fatty salmon is the most delicious of all the proteins.
  • Crispy baked salmon is the best way to prepare salmon
  • Pineapple and ginger make an amazing combination for a marinade or sauce!

This Pineapple Ginger Baked Salmon is you want in a great salmon recipe: it’s fatty, it’s zesty, it’s sweet, it’s tangy, it’s crispy AND glazed, protein packed AND interesting.

Let’s get into it!

Ingredients for Pineapple Ginger Baked Salmon:

Salmon: I use a fatty cut like King or Atlantic Salmon, but if you prefer coho or sockeye, get on it!

Avocado Oil: helps bind the ingredients for the marinade together. You don’t need very much to ensure everything gets nice and emulsified for the best marination experience.

Pineapple Juice: That sweet, tangy element that makes your taste buds go wild! I use 100% organic pineapple juice, which I find makes amazing marinades and sauces.

Fresh Ginger: Counterbalancing the sweet with some heat, fresh ginger yields incredible amounts of flavor!

Garlic: One clove of garlic goes a long way in this marinade. It adds more depth of flavor. If you don’t have any on hand, you can skip it and still be sitting pretty.

Liquid Aminos: That umami life! Liquid aminos (or soy sauce) adds that umami saltiness. Don’t skip it!

Sea Salt: Start with just a smidge and taste the marinade. Since you’re adding liquid aminos, you won’t need much additional salt. Salt to taste here!

Here’s how we make it!

How to Make Pineapple Ginger Baked Salmon:

Add all of the ingredients for the marinade to a blender and blend until smooth.

Place salmon fillets into a zip lock bag or sealable container and pour marinade over the fish. Seal and move the fish around until everything is well-coated in marinade.

How to Marinate Salmon

Refrigerate at least 1 hour (up to 8).

When you’re ready to bake, preheat the oven to 350 degrees F.

Place the salmon in a casserole dish, along with the marinade.

How to Bake Salmon in marinade

Bake for 20 to 30 minutes, until fish is cooked through.

Spoon the marinade over the fish (it will have thickened during the baking process) before serving and serve with choice of side dishes.
